cornbread recipe

cornbread recipe
I found this recipe in a rumford complete cook book dated 1948. 3/4 sifted all purpose flour,1 teaspoon salt, 3 teaspoons baking powder, 3 tablespoons sugar (optional I don't use), 1 1/2 cups yellow corn meal, 2 eggs beaten, 1 1/2 cups milk(i use buttermilk), 1/4 cup melted shortnening or real butter. Sift flour,salt,baking powder,cornmeal,and sugar if used. Combine eggs with shortening and use to moisten dry ingredients. I use electric mixer to mix. Turn into a well greased pan( i use a 12 in cast iron skillet). and bake in hot oven(400 F) about half an hour. I like this recipe better than some others I have used. Of course cast iron is the best way to go on cornbread.

Preacher Chris, although I am not a lady I do appreciate this recipe. I am so pleased you leave out the sugar when you make it. My Dad's whole family is from North Carolina. I think if anyone served them cornbread with sugar in it they might j ust have a heart attack or something. Out here they not only put sugar in the batter they then cover it with honey butter. I am sorry but to me cornbread is not supposed to be sweet.

I am of the same school and don't believe that cornbread shoul be sweet.

YOu forgot to mention that the best way to make cornbread is to fry up a couple strips of bacon in that iron skillet, and use the bacon grease instead of shortening or butter in that recipe! You can eat the bacon or crumble it up and put it into the cornbread. I don't like the sugar either - the yankees like their cornbread sweet like a cake.

Amen! I had an uncle who used to literally eat bacon grease on eveything he could. One of our favorites in NC was spoon bread. While everyone else was putting sweet maple syrup on it Uncle Bob was smothering it in bacon grease. Of course Uncle Bob is no longer with us. Perhaps it was the bacon grease?

I hope they have lots and lots of Bacon Grease in Heaven! I have high cholesterol, so I have not eaten bacon in many years! I hope to meet your Uncle Bob one of these days - it sounds as if we have a lot in common!

(I know you said he is no longer with us - but isn't that just a temporary state for us Christians? I can't wait for that Great Homecoming, can you?)
