i used this recipe recently.squash pecan casserole:1 pound squash
(i used yellow this time) 1 tablespoon sugar,1 egg,1/2 cup mayonnaise 1/2 cup ceddar cheese grated, 1/2 stick butter,salt,pepper,2 &1/2 cups of cornbread stuffing crumbs,1/2 cup pecans chopped. slice squash very thin cook. mix with sugar,egg,mayonnaise,grated cheese,butter and cornbread crumbs,add salt and pepper to taste.top with pecans. bake in oven at 375 for 25 to 30 minutes. i used a caste iron pot with a cover. my dad who usually don't like yellow sqarsh liked it.

Here is a dish that I made recently for my vegetarian wife.

Soften an equal amount of chopped leeks and onion in a little olive oil. Season with salt, pepper and a little nutmeg and touch of chili flakes. When softened stir in some Crème fraîche.

Put the mixture in an oven prove dish and cover the surface with sliced courgettes (zucchini) finish with a layer of sliced tomatoes. Again season with salt, pepper and sprinkle with a little herbes de provence. (I like these ground very fine) Finish with a sprinkling of fresh chopped parsley and sprinkle with a little olive oil and/or a little grated cheese. Bake for about 35 mins @ 180-200C about 375-400F I guess.

I thought this was better than my meat dish, Lamb rump with mint gravy.

One I did today.

Leek soup

Small onion
Small floury potato
A couple or three leeks, depending on size.

Chop all vegetables and gently fry in a pan with some olive oil, I use a wok.
Add some vegetable stock or water with a stock cube added (I use Knorr vegetable stock granules)

When all is well cooked liquidize/blend or pass through a mouli mill. Add some Crème fraîche, soured cream or just plain cream and serve with freshly baked bread.

i was going through an old recipe box belonged to my mom and found this one for peach pie. it was hand written. i tried this one today and it is a good one. 1/4 cup melted butter(one stick);1 cup sugar;3/4 cup all purpose flour;2 1/2 tsp baking powder,1/2 teaspoon salt 1/4 teaspoon nutmeg;1 tablespoon vanilla; 1/2 cup milk 3 cups peaches ;;; melt butter leaving in bottom of casserole dish,,,,,,,,sift flour-baking powder-salt nutmeg..mix all this together with milk and peaches with only 1/2 cup sugar,reserving the other 1/2 cup sugar.pour mixture on top of melted butter in dish. do not mix. then pour reserved 1/2 cup sugar on top. bake in 350 degree oven for 1 hour.
